Based on the popular chiffon cakes frosted with caramel buttercream, our version layers freshly-baked butter cake with Burnt Sugar Caramel Ice Cream. To make the caramel, we push the sugar right before the edge of scorching to give it notes of smoke and bitterness. As a final touch, we drizzle the top with caramel chocolate for a bit of texture. We normally like to use a lot of bold contrasting textures and flavors, so making this cake was a new challenge for us in practicing Restraint and Finesse.
