FYRE Rooftop Lounge: Get fired up at this hip hangout spot in Makati

Chefs Kel Zaguirre of Locavore and Keeb Sanchez have come up with a menu of their all-time favorite grilled dishes. Chef Keeb shares, “It’s named FYRE because everything’s cooked in an open fire. We also want to be remembered as a hang-out place that serves tambay favorites, the food you look for when you just want to chill and drink.”

1. Fyre Roasted Pork Belly (PHP380/300grams, PHP600/500 grams)

One of the bestsellers, Fyre Roasted Pork Belly is roasted for six hours until crisp and tender. It’s sinfully scrumptious, and will leave your palate wanting for more. The main taste is garlicky, but the addition of cherry tomatoes balances the overall flavor. It’s best paired with a bottle of cold beer or rice, or perhaps, beer and rice!

2. Fyre Nachos (PHP380)

This stack of red nachos is smothered in cheese and ground pork, topped with cilantro. The chopped green finger pepper just gives a hint of spiciness to break the monotonous taste of cheese. The serving is reasonably priced and good for at least 3 people.

3. Sambal Wings (PHP50/piece)

Another house favorite, this dish is an explosion of chili peppers, garlic, and herbs. Fiery but not biting, Sambal Wings just hits the tongue with a few kicks of spiciness. Good for sharing as well, but you might not want to.

4. Baby Back Ribs (PHP780)

This is one of the pricey items in the menu but it’s definitely one of FYRE’s best! Baby Back Ribs’ tender and juicy meat almost falls off the bone and the dips are equally delish. It may be completely charred in the outside, but its deep-seated rich and smoky flavor is the prize.

5. Spicy Noodles (PHP290)

The tambay’s go-to snack according to Chef Keeb. Spicy Noodles is inspired from the Pinoy favorite merienda Pancit Canton and pandesal. The nostalgic pair is reinvented with ramen noodles, house-made sauce and Brioche buns, mixed with oyster omelette.

6. Al Pastor Tacos (PHP320)

Al Pastor is also known as shepherd style in Spanish. This Mexican dish is composed of marinated grilled meat, herbs, and grilled pineapples on a soft tortilla served with lime wedge. It's relatively new in the menu but devout FYRE guests are already loving it!

7. Curry Beef (PHP420/300grams, PHP720/300grams)

Beef marinated in Chef Keeb's signature Indian curry for 6-7 hours, then roasted for 3-4 hours to perfection. It may be prepared in the Indian way but the taste is surprisingly like the local litson. You may opt to dip it in Aioli but the flavors are just on the spot.

8. Ninja Moves (PHP320)

While the dishes in FYRE are cooked in an open fire, mixologist Kalel Demetrio makes sure he aligned the drinks with the restaurant’s concept. Some of the cocktails are literally lit!

Ninja Moves is the ladies’ favorite. Citrusy with floral notes. It's a concoction of Suntory Whisky, aperol, lemon, egg white, syrup, and orgeat (almond, rose, orange).

9. Fyre My Thigh (PHP320)

Fyre’s own version of the classic Mai Tai. It’s a combination of Very Old Captain rum and Maker's Mark bourbon with peach, rosemary, and Earl grey liqueur.

10. Beer Cocktails (PHP250)

  • Dark Horse - Red Horse with Amadeo coffee liqueur and orange juice, sweetened with caramel
  • Stellar Kisses - Stella Artois with rosemary, gin, and peach
  • Beery Nice - Super Dry Pale with hibiscus fruit and some empire vodka

Chef Keeb says they plan to release around 10 new dishes every month, so make sure you catch up!
