With Pinoys’ love for chicken, Chef Gino Gonzalez came up with the idea of having a restaurant serving chicken dishes from around the world. As a result, Poultry Stack became a reality. This bistro just opened this year along Scout Tuazon in Quezon City and 95% of their menu is chicken-based.
Golden Chicken cutlet breaded in panko breadcrumbs and deep fried to perfection. Triple Cheeze Chicken Parmigiana is smothered with Poultry Stack’s house-made Pomodoro sauce that will take your taste buds to Italy. The triple cheese perfectly balances the tangy sauce and rice.
Dosed with lots of roasted garlic which seeps into the juicy meat, no wonder why Poultry Stack Garlic Overload Chicken has become the favorite! It’s marinated in curry, herbs, and spices then deep fried until crisp and tossed in a mixture of aromatic lime and spices. The climax? Dip it in Thai sauce to have the explosive play of garlicky-sour flavor in your mouth.
Poultry Stack also serves local dishes and one of which is Pianggang Itum – a Zamboangan recipe of Smoked Coconut Chicken. It’s a surprise that they introduced a Tausug specialty to Manila and the process of cooking it is as much as interesting as it tastes. The chicken braised in smoked coconut milk then grilled and served with Turmeric rice and sunny side up. With the coconut being grilled, expect a clash between the smoky and nutty flavors.
There’s no better way to end a gastronomical trip than a spoonful of sweets. Calamansi Cheesecake, brown butter cheesecake topped with calamansi gelatin and spun sugar, will give you a tickle after a chicken-filled meal. They also serve eye-candy milkshakes of different flavors.
